Greetings, this is CATCH MIND. Recently there are many people learning about roasting as well as studying to become a barista and brew the coffee on their own. I believe that's why people like to buy roasted beans and making their own cup of cold brew or drip coffee at home.

So, today I'm going to talk about the useful for tips in buying coffee beans for your home café.

 

 

 

Things that happen to the beans after roasting

The roasted coffee is filled with gas. This is due to the chemical reaction during the roasting process that produces carbon dioxide gas.

This carbon dioxide gas interrupts the coffee extraction process. There are limitations in how to use extraction tools and extraction techniques.

 

Therefore, coffee must be extracted after a certain time. This process of sending out the gas is called Degassing. The speed of degassing process depends on how you store the coffee beans.

 

Actually, it is quite difficult to extract the component of coffee from the coffee beans just roasted or so called "fresh beans". Also, in order to bring out the unique taste and texture of the coffee, it is better to use the beans degassed properly or the "Less fresh beans"

 

Tips for buying good beasns

Let me talk about simple yet, essential information in buying coffee beans.

 

1. Check the roasting date before buying them.

It is always good to check the roasting date on the package. Some retailers do not even state the date and try to sell the old beans.

 

Especially when you are buying beans from franchise café or large supermarket. You should pay more attention to the roasting date.

 

 

(* Aroma valve on the coffee package sending out the gas generated from inside while minimizing the inflow of oxygen from outside. So, it is not good to press the package and try to smell the coffee aroma because it will speed up the oxygen inflow.)

 

 

2. Purchase coffee within two weeks after the roasting.

It is better to buy coffees within two weeks after roasting. Especially during summer, within one week after the roasting is better as the hot weather fastens the degassing process.

 

3. It is better to buy the amount only enough to consume within 1-2 weeks.

No matter how well you keep the coffee beans, the degassing will happen as time passes. It varies depending on the condition of green bean, type of roasting machine and Agrton index, the beans' taste will deteriorate after 2-3 weeks. The oil in the beans will acidify then deteriorate the taste and it is bad for your health as well.

 

If you do not want to brew the coffee on the day, I recommend purchasing freshly roasted beans and brew them as degassing takes place.

 

4. It is not recommended to buy the ground coffee.

Just after 15 minutes, 50% of the coffee aroma will be lost in the air and after 30 minutes, all the aroma will be gone. Oxygen is the main culprit that destroys the aroma of coffee. Moreover, the finer the coffee bean is, the faster it loses its aroma.

 

The ground coffee beans have wider surface area exposed to air compare to the whole beans(non-ground beans), thus the degassing process will be even faster.

 

Thus, It is better to not ground the coffee when you purchase or purchase the ground coffee.
